Meet the Team

  • Owner

Leon started out cooking at home at a young age and much to his mums frustration got more ingredients on the counters and floor than in the actual recipe! Many years on he decided to start Hamilton Catering to share his love of food and drink with everyone he meets.

Favourite Savoury Dish: A Simple Bavette Steak & Rosemary Fries

Favourite Dessert: In the winter it has to be an apple crumble, in the summer I can’t say no to a lemon tart!

    Dislikes: Square plates and coriander!

  • Chief Meow Officer

Lola is the cute and attention seeking mascot of the company but much to her discontent she’s not allowed anywhere near the kitchen! She enjoys short walks to her food bowl, long naps on the couch and playing with her squeaky toy at 3am.

    Favourite Savoury Dish: Wet Food

    Favourite Dessert: Dreamies!

    Dislikes: Not getting enough food

Ethics Policy

We ethically source the freshest seasonal fruits and vegetables and we never, ever use palm oil. Palm oil is an important resource. It helps to grow the GDP of developing countries and many farmers rely on this crop for their livelihoods. It also produces a much higher yield per land area than any other equivalent vegetable crop. However, due to our reliance on this crop, palm oil is an enormous contributor to the deforestation of rainforests and is a major contributor to climate change. While we choose not to use palm oil in , a global boycott would not be practical. Many retailers and nations pledge to only import and use sustainable RSPO certified palm oil. The hard part for us is identifying the suppliers and products that follow this stringently and so for the foreseeable future we choose not to use this crop at all in any part of our business until absolutely confident this is something we can do.

We use the finest French and Belgian chocolates from Valrhona and Callebaut in all of our recipes which is 100% sustainable. The farmers involved in the Cocoa Horizons program receive a fair wage for their hard work and also receive education and training for themselves, their families and their communities.

All of our packaging is 100% biodegradable, our fresh produce is purchased single use plastic free and our meat and fish suppliers are held to the highest ethical standards.

Where possible we also strive to use as many local, independently owned and small scale suppliers to our business and will happily champion these superstars on our menu.

Our Chosen Cause

While many other hospitality business out there rightly so choose to advertise their partnerships with charities or their hiring policy, we choose to to be a little more reserved. Members of our team have experience of living with or caring for someone with depression or anxiety and while it is often their personal choice to remain private on the subject this doesn’t stop us from supporting, hiring and promoting positive mental health in our workspace and in the wider hospitality industry.

Hospitality is one of the most critiqued industries in the world and whilst a team of superstars from chefs, to waiters and bar runners are constantly smiling and bringing you a great service they may be fighting against something inside. Many of our team have at some point struggled with their own mental health and we choose to foster a culture of inclusivity and positivity where team members feel comfortable to talk to anyone in the business about struggles they are facing, but are also free to handle their personal circumstances privately and without fear of reprisal.

All customers are discretely offered the chance to round up the cost of their booking to the nearest hundred and we will match this amount and donate to the charity CALM (campaign against living miserably) with no questions asked or judgement should you wish not to.
